This recipe is a winner on every dinner table. I know that the red cabbage is more widely used in salads or pickled in vinegar outside Germany. However, there is this one special way of making this cabbage really tasty.
cooked red cabbage is for me always an absolute must have during the winter months and especially during the festive period.It’s easy to prepare and will just cook away for 2 hours while you can work on other things.
What you need:
1 x medium to large red cabbage
3 x medium to large white onions very thinly diced
3 x medium size apples (sweet apples) diced into small chunks
goose fat (equally duck fat works fine)
200 g black current jam or jelly
1-2 bay leaf*
10 juniper berries*
5 Cloves to taste*
*I recommend keeping these together in a little bag to add to the pot. i use tea or coffee filter
Shred the red cabbage, dice the onion and the apples. Transfer the fat to a very large pot. Add the onions and fry until lightly browning. Add the apples and fry for at least another minute together with the onions. Now add the red cabbage and again fry for another 2-3 minutes. Add all the remaining ingredients. You can add water, apple juice or red wine if you find it too dry.. Leave the cabbage to simmer for at least 2 hours. season as needed with salt.
This cabbage goes perfectly with any red or white meat as well as vegetarian roasts. You decide.
This cabbage is prefect to portion and freeze so you can enjoy it for longer.
