Butter Bean Mash

This is for sure one of my favorite replacements for potato. Its quick and easy and so very delicious. At 39 pence average price for a tin of beans, its a very low cost meal as well and still so full of goodness for you.

All you need for this yummy dish is: (for 2–4 people)

  • 2 x 200 g per cans of Butter Beans
  • 1 clove of garlic
  • Lemon zest from 1 unwaxed lemon
  • 1-2 Rosemary twigs
  • 60 ml Olive Oil
  • Salt and Pepper to season

What you need to do:

  • Heat the Olive Oil in a small pan
  • Peel the garlic and add to the oil.
  • Stir well to avoid the garlic to burn, best to keep the cooker at an moderate heat.
  • Add the lemon zest
  • Add the rosemary
  • It will start to smell delicious at this point already. I promise!
  • Drain the Butter Beans and add to the pot
  • Season with the salt and pepper
  • Stir and squish the beans constantly. They will begin to soften.
  • Remove the Rosemary before it falls apart
  • Continue until you have a rough mash consistency.
  • you can re-use the rosemary for decoration.
