Banana Bread

Everybody likes Banana Bread and there are probably hundreds of recipes out there that are all super yummy. I actually had never made Banana Bread before until my sister sent me a recipe card from Joanna Gaines. You might know her from Fixer Upper. One of my favourite programs for sure. Shame to see it end shortly. Anyhow, i was intrigued and gave it a shot myself, but had to change a few things to make it more suitable for my diet. So thanks Joanna Gaines for the base idea. Its working perfectly fine. The result is super tasty and the perfect treat for breakfast, lunch or dinner or in between…

What you need:

  • 1 cup coconut sugar (you can use any other sugar or sweetener)
  • 110 g softened butter
  • 2 medium sized eggs
  • 3-4 very ripe bananas, mash them up (I used 3 medium size for mine)
  • 2 cups flour; I am using buckwheat flour which game it a nice and rich taste
  • 1 tsp baking powder (I used Xantham Gum but you can also use baking soda)
  • 1/2 tsp salt (I used Himalayan Pink Salt)
  • 1 tsp vanilla extract (I used the powdered extract, liquid extract works just as good)













What you need to do:

  • Combine the butter, sugar and vanilla until fluffy using an electric whisk
  • Add the eggs and bananas and whisk until combined
  • Add all the remaining ingredients until you have a smooth dough
  • Transfer the dough into a bread loaf tin or any other cake tin or baking dish of your choice
  • Bake at 160 C (325 F) for about 30-50 min.
  • I found that it was still a bit soft inside after 35-40 minutes so depending on your oven, it might need longer or shorter
